Le Blanc: Aligoté grapes from the Les Gouttes plot in the commune of Meursault 
Maceration for 4 days to extract maximum aromas (which is extremely rarely done for whites which are generally pressed directly) and which gives the wine a very light orange color. 
Pressed by us in a mini manual wooden press
Placed in new 57 liter barrels.  
Barrel prepared to measure for this wine by a 40-minute passage in steam under pressure in order to reduce the woodiness which on such a small quantity of wine would have marked the wine too strongly. 
In fact, the smaller the barrel, the greater the proportion of wood to liquid. 
End of alcoholic fermentation and malolactic fermentation in the barrel during the following months. 
Bottled in April 2017. 
Total production 67 numbered bottles.
