The "Varron" Chardonnay is sourced from a 0.39-hectare plot planted in 1956, situated on Bajocien limestone soils with red clay. The winemaking process involves whole-cluster pressing, spontaneous fermentation using indigenous yeasts, and aging in neutral oak barrels for 18 months on its fine lees. Notably, no added sulfites are used.
