With a background as sommelier on high end hotels and restaurants, Olivier Cheréau  now farms a small plot in Valais Switzerland. He is from the region of Savoie in France, where he serves as an ambassadeur for Vin De Savoie, is the main man behind Jour Fruit, a yearly Salon with representation, only from winegrowers or merchants working in respect of nature. He is teaching wine at the sommelliers school in Savoie and the list continues.

Olivier has worked with wine both in Chile "Vina Perez Cruz", Rhone with David Reynaud of Domaine les Bruyeres and in Burgundy at Chateau Chassagne Montrachet, there is no doubt, his main focus is the agriculture. 

On top of this, he is practicing heroic wine making in the Swiss alps. Situated in saviese (Sion) in central Valais neighbouring all of our other hero Valais vignerons, Lucas Madonia, La Momoterie and Marc and Andrea Cherouche, and quite close, also to Hans-Peter Schmidt and Mythopia. 

The parcels in Valais are at 750-800 meters altitude. With a limestone and Schist soil.

At Wine Vs. Wild he is working mainly on Savagnin and Chasselas, but also with Chardonnay, Muscatt and Sylvaner. The wine is fermented mainly on Amphora, but he also has a few small oak casks. The approach is natural, but with a minimum of sulphur added when bottling,

Meeting Olivier for the first time at Salon Des Alpes back in April, 2/3 of the Krone team was convinced. The next day he took the time to show us his Parcels, a very steep journey, but definitely worth the climb. We arrived late afternoon, doubting if our rental car was able to manage. After smelling the soil, and tasting cask samples in his minimal cellar, it was clear, we had to do with an uncompromising vigneron, and the whole team was on board. We are certain that we will see some big things coming from these hands in the future.

His cellar is one of the smallest we have seen, so naturally we have only few bottles in stock of each Cuvée.
