Les Dolomies – Vigneron Profile

Céline and Steve Gormally founded Les Dolomies in 2008 in the southern Jura, near Passenans. Céline originally trained as a geologist but was drawn to winemaking through her deep love for nature and terroir. From the beginning, their philosophy has been rooted in biodynamic farming, with full certification from 2011.

Region: Jura, France – specifically in Passenans, Frontenay, and Château Chalon.

Altitude: Vineyards sit at 250–350 meters above sea level.

Size: 4 hectares in total.
Les Boutonniers (2.3 ha, Frontenay)
Les Combes (1 ha, Passenans)
Small parcels in Château Chalon.
Production: Approximately 12,000 bottles per year, varying by vintage.

Terroir / Soil:
Clay-limestone and marl soils with a strong Jurassic influence.
Rich in dolomitic limestone, which inspired the domaine's name.

Approach:

100% biodynamic farming since the beginning.

Manual vineyard work, including plowing with their horse, Octavia.

Non-interventionist winemaking – spontaneous fermentation with native yeasts.
Aging in used 300–400L barrels to maintain purity and freshness.
