Domaine Piccard / Jean-Christophe Piccard
• Background:
Jean-Christophe Piccard is a fourth-generation grower from Lavaux, but only started bottling under his own name in 2016. After decades of selling grapes to local cooperatives, he decided to reclaim control over his vineyards and give voice to the land through his own wines.
• Region:
Lavaux, Vaud, Switzerland.
• Altitude:
Vineyards are located between 450 and 600 meters above sea level, with views overlooking Lake Geneva.
• Size:
Approximately 3.5 hectares across several small parcels. Annual production around 12,000 bottles.
• Terroir / Soil:
Primarily limestone-based moraine soils mixed with sand and gravel – typical of Lavaux and known for lending freshness and mineral structure to the wines.
• Grapes:
Chasselas, Pinot Noir, Gamay, Gamaret, and Garanoir.
• Approach:
Originally farmed conventionally, but in recent years Jean-Christophe has shifted toward organic and biodynamic practices. He works with a strong respect for the land’s history and microclimate, focusing on biodiversity and minimal intervention.
• Vinification facts:
All grapes are hand-harvested. Fermentation is spontaneous with indigenous yeasts. No additives are used, aside from minimal sulfur at bottling. Wines are vinified in stainless steel or old neutral barrels to preserve varietal expression. No fining or filtration.
• Interesting facts:
Jean-Christophe lives in the family’s old home, nestled in the vineyards above Chexbres, and has revived several abandoned parcels. He avoids labeling his wines as “natural,” preferring to call them “honest and precise,” letting Lavaux speak without filter.
